1 cup grated beetroot
2 cups grated carot
spring onions or 1 chopped onion
2 cloves crushed garlic
1/2 cup chopped parsley
Dressing:
1/2 cup cider vinegar
1/2 cup olive oil |
Combine salad ingredients. Shake dressing
well, and pour over
salad. |

Oriental Chicken Salad - Carol Hanson
1 small bunch spinach
1/2 cup bean sprouts
several mushrooms, sliced
1/4 cup water chestnuts
4 Tbsp. olive oil
1 Tbsp. sesame oil
2 tsp. rice vinegar
1 tsp. tamari soy sauce (optional)
1 tsp. chopped ginger
salt to taste.
Combine dressing ingredients, mixing well
to disolve salt. Toss
with salad
ingredients and chill well.

| Avocado & Banana Salad - Graham Child |
2 large ripe avocado
2 bananas
2 tbsp lemon juice
tsp very finely chopped red chilli
50g Walnuts roughly chopped
seasoning
1 tbsp finely shredded coriander leaves |
Method:
Cut the avocado & banana into bite size
pieces and place in a
bowl and
immediately add the rest of the ingredients
and mix. |
